Spicy Thai Pork and Beef Lettuce Cups

I really love this recipe for Spicy Thai Pork and Beef Lettuce Cups because Chase usually helps me when I cook this. This recipe was inspired by a recipe that I saw Gordon Ramsey  make on some show on BBC.

Of course I didn’t write it down, that would take all the fun out of creating an amazing recipe. I just started making something that kind of looked like what he made. Unfortunately, I didn’t know what kind of peppers he used so we decided to use 5 whole serrano peppers.

I think it was the spiciest thing that I have ever eaten in my whole life! My mouth was on fire and I got the juice from the peppers in my eyes! I have to say that it was an experience – I had to wash my eyes out with milk and wash my hands with dish washing detergent. At least that’s what Grant told me he found on the internet as the answer to my pepper problem.

 

Be careful with the serrano peppers! My hands were red and swollen until the next night. Now I wear gloves when I chop peppers and here’s a great tip,  the smaller the pepper is the hotter it will be.
Ingredients

2 chopped serrano peppers
1 tbsp. toasted sesame oil
1 can of diced water chestnuts
1 lb. ground pork
1 lb. ground beef
1 tbsp. fish sauce
juice from one half of a lime
sea salt
pepper
2 cloves of chopped garlic
2 heads of butter lettuce

Sauce

1 tbsp. toasted sesame oil
2 tsp. fish sauce
2 tbsp. ponzu sauce
1 chopped garlic clove
2 chopped green onions
2 tbsp. soy sauce
juice of one lime

Garnish

1/2 cup sliced green onions
1 cup crushed cocktail peanuts
lime wedges

How To

Coat the pan with sesame oil and heat on medium. Season the pork and beef with salt and pepper and then add to the hot pan with the sesame oil.

Next, Carefully cut the peppers in half and remove the seeds and the white vein. If you want to make these crazy, stupid, super hot, spicy you can chop that up too and throw it in the mix but it will burn your mouth and hands if you are not careful.

Add the garlic, onions, peppers and water chestnuts, Stir occasionally to be sure nothing sticks to the pan.

Once the meat is browned and crispy you can remove it from the heat and add the fish sauce, lime juice and cilantro.

Mix the sesame oil, fish sauce, ponzu sauce, chopped garlic, green onions, soy sauce and lime juice to make the sauce.

It adds so much flavor to the meat but it’s strong so you’ll only need 1 tbsp for each lettuce cup.

Garnish each cup with the sliced green onions and crushed peanuts and serve with lime wedges.

These spicy pork and beef lettuce cups are Thai inspired with toasted sesame oil and fish sauce. There is a lot of heat from the serrano peppers and the water chestnuts and crushed peanuts add a nice crunch. I always serve these with cilantro lime rice.
